Cocktail Class
Please join us for March’s seasonal cocktail class!
Hosted by our Owner/Operator, Ricky Gomez. We will dive into the various types of agave used for each spirit and how the location and climate of the agave plants affect the flavor profile of the final product.
Throughout the class, we will also learn about the different classifications of tequila and mezcal. We will discuss the importance of terroir and the impact it has on the final product, as well as the cultural significance of these spirits in Mexico and beyond. Whether you're a seasoned tequila and mezcal connoisseur or a curious beginner, this class will deepen your appreciation and knowledge of these beloved spirits. Join us as we explore the world of tequila and mezcal!
Snacks are provided. Everyone will leave with a little gift bag from some of our spirit sponsors. Two times are available: 6pm and 8pm. Classes will run roughly one hour and thirty minutes.
The Return of Brunch!
Did you miss our guava french toast or the Frita McMuffin? We did too!
After taking a breather from our rooftop popup Tocayo we are going full force into brunch to fry up some eggs and pork belly bacon and chase it down with a Pina Colada! We will be doing brunch Saturday and Sunday from 10AM - 2PM with the convince of Resy so you don’t have to wait in line!
Fall Menu Launch
Starting on Tuesday, October 10th we will be doing a Fall seasonal menu flip. The menu changes will feature new food and cocktails that will embrace the sweater weather season.

Chicken Fried Sundays
Our "Chicken Fried Sundays" will be every Sunday starting 10/08 at 5PM and will feature Chef Ricky Bella's fried half birds with a delicious mojo Cuban spin. These birds are in limited supply and will run out quickly!
Portland Cocktail Week
This year Palomar will be celebrating Portland Cocktail Week in a BIG way. We are proud to be working with spirit bands and bars across the country to be hosting events, seminars and parties! Last Day of Tocayo

Please join us on Saturday 9/30 as we close out our summer popup Tocayo! We’ll be saying goodbye in the best way we know how by roasting 2 whole pigs and slinging frozen margaritas, while still featuring all of our greatest hits from over the summer.

Negroni Week
It’s that time of the year again when bars across the country pay homage to one of the greatest cocktails of all time, the Negroni!
This year Campari and Imbibe Magazine are working with Slow Food’s to support their mission to foster a more equitable and sustainable world of food and beverage. Palomar will be taking part in Negroni Week with our very own take on the beloved classic by featuring a blended version. We’ll be representing Palomar and the classic favorite aperitivo cocktail with a blended version featuring Aviation Gin, Campari, Lo-fi Gentian Amaro, passionfruit, orange and guava!

Palomar + Peacekeepers Raising Funds for Maui
All this week we will be working with Peacekeepers Society to raise funds for Maui. We’ll be featuring a special cocktail all week with our spin on the tropical classic, Surfer On Acid, $2 from the sale of each cocktail will go directly to families in Maui for their recovery relief. Come show some support with a delicious drink in hand!
Tasting Collective Dinner Series
Palomar will be closed on June 27th and 28th for a full tasting menu with our friends at Tasting Collective. We still have a seats left on 6/28 our 5PM and 7:45PM seating, with A link below. We will be featuring a 5 course tasting menu from our Chef, Ricky Bella, as well as cocktail pairings from our Bar Manager, Jordan Valls. We’re grateful for the opportunity to work with the Tasting Collective to flex our culinary muscles and are excited to be able to extend this dinner to our guests!

American Whiskey Cocktail Class

New Years Eve: Mariquitas and Caviar

Chef Bella will be creating three unique dishes for the evening to ring in the New Year. Think caviar and mariquitas to start, grilled diver scallops appetizer, and a braised wild boar with yuca and truffles for your main course.
Noche Buena Party
We are extremely excited to bring back our Christmas Eve holiday tradition, which we have not celebrated since 2019. As is Cuban tradition, on Christmas Eve we will host our Noche Buena gathering. This will be different from our traditional table service dining experience. There will be only one seating for the evening, so there will be limited spots.

Grandpa Gueros Hot Sauce + Hot Buttered Rum Pop-up
Looking for a gift for the holiday season? Come get some of Grampa Guero's Hot Sauce to warm you up. Grandpa Guero’s Hot Sauce was founded in 2020 amidst the global shut down by Chef Ricky Bella, and named after his late grandfather. The mild “Chipotle” and hotter “Serrano” are hand made and bottled in Portland, Oregon.
